After a week (or two...maybe three) of feasting, my body needed a break. No more butter, it pleaded. No more sugar. And, please, pretty please, skip the heavy cream for a few days. Give me green, give me orange, give me red. Give me whole grains and plant protein. Give me vitamins C, K, and A. And make it pretty.
I've done my best to oblige this baby-growing body of mine. This bowl has been a staple for the last few days. Since it's been so good to me, I wanted to share it with you. Because it's good -- in taste and effect.
Cumin-spiced, power-packed black lentils and protein-rich quinoa sit atop a bed of baby greens, are graced with roasted beets and carrots and finished with an orange-honey tahini. It's simple, satisfying, and utterly scrumptious. I promise.
