Fresh Apricot, Caramelized Fennel, and Arugula Salad

Fresh Apricot, Caramelized Fennel, and Arugula Salad

Ingredients:

2 tablespoons olive oil
1 bulb fennel, thinly sliced
Pinch salt
4-5 apricots, sliced or chopped
1/2 red onion, thinly sliced
5 ounces arugula
4 ounces goat cheese, crumbled* (optional)
1/3 cup hulled sunflower seeds (optional)
Agave Apple Cider Viniagrette, to taste

*To easily crumble goat cheese, place in the freezer for 15-20 minutes. Remove from freezer and crumble with a fork. 

Directions:

1. Heat olive oil in a skillet over medium heat. Add fennel and sprinkle with salt. Stirring frequently, cook until fennel has softened and become golden-brown. This should take 12-15 minutes. Remove from heat and allow to cool slightly.
2. Toss together arugula, apricots, onions, fennel, goat cheese, and sunflower seeds. Drizzle with vinaigrette. 

Agave Apple Cider Vinaigrette

Ingredients:

3 tablespoons extra virgin olive oil
2 tablespoons raw apple cider vinegar
1 1/2 tablespoons agave nectar
Pinch salt
Pinch freshly ground black pepper

Directions:

1. In a small bowl, whisk together ingredients until thoroughly combined. Store in small jar or bowl and shake or whisk before using.

🌱☀️👧🏼 When she woke up on Friday morning, she smiled and said, "we have rainbows in our bones." #rubydayleahy She was due three years ago, on a day like this one. Redbuds and bluebirds, a breeze sending shivers down our too lightly clothed backs. I went for a walk in the woods, I waited for a contraction, a twinge, a gush--anything to signal a coming birth. I walked in those woods almost every day for nine more days, my footsteps growing heavier, my patience wearing thin. She came when she was ready, a bird-like baby with a fierce will and gentle, happy spirit. And here she is, my greatest joy and challenge, walking with me in the woods, splashing in creekwater, and listening for woodpeckers. It's all too much and yet there can never be enough. #rubydayleahy Real life: I've had a migraine every day for the last six days. Today, the pain (blurry  vision, numbness, nausea, etc) sent me home and kept me in bed all afternoon. This kid snuck away from her Mimi every chance she got to sneak into my room and give me kisses and pat my head. After she found out loud noises were hard for me, she tiptoed around the house and whispered. Empathy is a superpower and we just have to learn, and then remember, how to use it. In case you haven't heard, it's snowing. So it's all making snowpeople, drinking hot chocolate, and watching Sesame Street from inside a giant box over here. #rubydayleahy In our bones we need the natural curves of hills, the scent of chapparal, the whisper of pines, the possibility of wildness. We require these patches of nature for our mental health and our spiritual resilience. (Richard Louv) ❤. Today and every day.
Friends watching friends get engaged. Editing photos and found this gem snapped by @abbyskolits. What a night. On the last day of my 20's, I woke up in the jungle, hiked through meadows and under evergreens to a cloud forest, and saw a perfect rainbow. Costa Rica, you are something special. PSA: In some parts of the world, this is what January looks like. Today we saw howler monkeys, two-toed and three-toed sloths, tree frogs, iguanas, a toucan, a "stick bird," crabs, raccoons (not nocturnal here!), deer, and capuchin monkeys. I'm in awe, feeling like the luckiest human on the planet. What I think I'll remember most clearly about today, though, is Ruby falling asleep in my arms while on a guided tour of Manuel Antonio national park. My head was spinning with wonder, my arms screaming with exhaustion--alive, strong, connected to my child and this place and this earth. One enormous speck breathing and exhaling, waking and sleeping, living and dying together. 👋 from paradise Nap queens. #rubydayandstellaboo Ending and beginning again. My favorite weekend of the year, three circles around the sun and counting. There is something so, so special about a tradition like this to mark the passing of time.
